The Most Awesome Carrot Cake Ever!!

Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup oil
  • 4 eggs
  • 1 (8 oz) package cream cheese
  • 1 (1 lb) box confectioners' sugar

Directions:

  1. Preheat oven to 350 degrees.
  2. For the cake, mix all the dry ingredients together.
  3. Add oil and mix well.
  4. Add eggs 1 at a time, beating well after each addition.
  5. Fold in carrots and mix well.
  6. Pour batter into 3 (8-inch) cake pans that are lined with parchment paper.
  7. Bake for approximately 18 - 35 minutes. Test using a toothpick.
  8. Icing:.
  9. Cream the cream cheese and butter together.
  10. Add the confectioner's sugar and beat until smooth.
  11. Fold in the pecans.
  12. Spread on the cooled cakes.
