The Best Sweet Potato Pie

Ingredients:

Directions:

  1. Lightly butter a 9-inch pie plate
  2. Roll out the pastry dough to fit into the pie pan.
  3. In a bowl combine the sweet potatoes and 1/2 cup butter.
  4. Add the sugar. flour, vanilla, 1/4 tsp salt, the cinnamon, nutmeg, and cloves mix well.
  5. Add eggs, one at a time, mixing well after each addition.
  6. Add evaporated milk and mix well.
  7. Preheat the oven to 425*.
  8. Pour the sweet potato filling into the crust.
  9. Bake the pie ofr 20 min, then reduce the heat to 325* and continue baking for another 30 to 40 minutes.
  10. The topping: While the pie is baking, place 2 tbsp butter and the brown sugar in a small skillet over low heat.
  11. Stir until butter is melted and and sugar has dissolved and the mixture is bubbling.
  12. Add pecans and 1/4 tsp salt.
  13. Continue to cook, stirring for 2 mins.
  14. Remove from heat and pour onto a sheet of aluminum foil.
  15. Let this cool completely.
  16. Crumble the topping into small pieces and sprinkle over the pie.
  17. Let the pie cool completely before serving.
  18. Serve pie slices with a dollop of whipped cream!!!
