Ingredients:

  • 1-1/4 cups currants
  • 2 cups flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1/2 cup shortening

Directions:

  1. Rinse and drain currants.
  2. Sift flour,baking powder,salt and sugar into a bowl.
  3. Cut shortening until crumbly.
  4. Add eggs,evaporated milk and currants,mix well.
  5. Knead lightly on floured surface.
  6. Pat into 8 baking pan.
  7. Score halfway through into 8 wedges.
  8. Bake at 425 degrees for 20 to 25 minutes(or)until golden brown.
