Ingredients:

Directions:

  1. Heat oven to 350°F Line cookie sheet with parchment paper.
  2. In a small sauce pan, melt butter over medium heat. Add honey and baking soda to the butter and stir well. Remove from heat and set aside.
  3. Mix the flour, flax seed, oats, sugar, coconut and salt in a bowl.
  4. Add the melted butter to the dry ingredients and stir to combine.
  5. Roll dough into 12 balls and flatten with bottom of glass. Place on cookie sheet 2 apart.
  6. Bake for 10-12 minutes or until golden brown. Remove from oven and cool on sheet for 5 minutes.
  7. Remove to wire rack to cool completely.
