Thai Shrimp Chicken Salad

Ingredients:

Directions:

  1. Marinate chicken overnight in 2 Tblsp of peanut satay sauce
  2. In a wok heat peanut oil
  3. Place shallots in oil
  4. Once slightly browned add chicken and shrimp
  5. Once cooked add 2 Tblsp of satay sauce mix and cook thoroughly
  6. In a saucepan bring water to a boil and turn off heat. Place noodles in the water for 4 minutes
  7. Remove from hot water and run cool water over noodles for approximately 30 seconds
  8. Place noodles in the wok with the chicken and shrimp
  9. Add sweet chili and mango chili sauces to mixture
  10. Stir and mix thoroughly.
  11. Remove from wok and place in a large bowl in the fridge.
  12. Once mixture is cold add green and yellow peppers, mango, mandarin slices, and raddichio.
  13. Mix well
  14. Serve cold
