Texas Spoon Bread

Ingredients:

  • 3 cups milk
  • 1 tbsp butter or 1 tbsp margarine
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp baking powder

Directions:

  1. In saucepan, scald the milk; stir in cornmeal.
  2. Reduce heat; simmer 5 minutes, stirring constantly.
  3. Remove from heat; stir in butter, sugar, salt and baking powder.
  4. In small bowl, beat egg yolks.
  5. Gradually stir a small amount of the hot mixture into yolks; return all to pan and mix well.
  6. In mixing bowl, beat egg whites until soft peaks form.
  7. Fold egg whites into hot mixture until well blended.
  8. Pour into greased 8-inch square baking dish.
  9. Bake at 350° for 40-45 minutes or until well puffed.
  10. Use a spoon to serve.
