Ingredients:

  • 1 (14 oz) can white shoepeg corn
  • 1 (14 oz) can pinto beans
  • 1 (14 oz) can black-eyed peas
  • 1 (2 oz) jar pimientos (small)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp water
  • 3/4 cup vinegar
  • 1/2 cup oil
  • 1 cup sugar

Directions:

  1. Drain and rinse all canned veggies.
  2. Chop all veggies and place in a container.
  3. Pour sauce (recipe below) over vegetables in the container and marinade mixture overnight.
  4. To Make Sauce:.
  5. In a small saucepan, combine salt, pepper, water, vinegar, oil, and sugar.
  6. Bring to boil until ingredients have combined.
  7. Remove from heat and use while still hot.
