Ingredients:

  • 1 (15 oz) can black-eyed peas
  • 1 (11 oz) can shoe peg corn
  • 1 (15 oz) can black beans , thoroughly rinsed
  • 1 (4 oz) jar pimientos
  • 1 (4 oz) jar jalapenos
  • 1 cup olive oil
  • 1/2 cup cider vinegar
  • 1 cup sugar

Directions:

  1. Drain all canned and jarred items and rinse.
  2. Place oil, vinegar and sugar in a sauce pan.
  3. Heat until sugar dissolves.
  4. Mix all ingredients together with marinade in a bowl.
  5. Cover and refrigerate overnight (or longer).
  6. Drain the marinade off the mixture to serve.
  7. Serve with Tostitos Scoops.
