Ingredients:

Directions:

  1. Cook rice according to package directions, omitting salt and fat.
  2. Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add onion and pepper; saute until tender. Add rice, beans, barbecue sauce, and coffee. Bring to a boil; reduce heat, and simmer, uncovered, 5 minutes or until thoroughly heated.
