Ingredients:

Directions:

  1. Put the water in a saucepan and add 1 tsp salt. Bring to a boil and slowly add the rice. Reduce heat, cover, and cook for 5 minutes.
  2. Remove from the heat and transfer to a large bowl.
  3. Melt the butter in a large skillet. Add chopped onions and cook over medium heat until they are shiny and soft, about 5-6 minutes.
  4. Place onions in bowl with the rice. Add the grated cheese and the half & half (or milk).
  5. Stir to mix well. Taste and correct the seasoning, add up to 1/2 tsp more salt if needed.
  6. Spread mixture into a baking dish and bake for 50 to 60 minutes, until lightly golden on top.
