Ingredients:

Directions:

  1. Saute' in olive oil the veggies all except for the lentils and the 1/2 head of cabbage to break them down and bring out the flavors.
  2. Fill lg pot with veggies and cover with water and cook over low heat for ~ 2 hours (slow boil, then lower heat to simmer) add lentils and cook for another 35-40 minutes, add the 1/2 head of cabbage about 20 minutes before you are ready to eat and continue to simmer. Add fresh cilantro, chili powder, sea salt, and pepper to taste. You will also need to add water during the cooking phase as needed. Do not add water during the last 45 minutes to 1 hour or it will be watery tasting.
