Tara's Chocolate Zucchini Muffins

Ingredients:

  • 1/2 cup butter, soft
  • 1/2 cup vegetable oil
  • 1 3/4 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 4 tbsp cocoa
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp clove
  • 1/2 cup buttermilk or 1/2 cup sour milk

Directions:

  1. Combine dry ingredients.
  2. Cream butter, sugar and oil until fluffy. Add in eggs one at a time, then vanilla.
  3. Stir in sour milk and grated zucchini.
  4. Combine wet and dry ingredients, then fold in chocolate chips (or you can just sprinkle a few on top of each muffin before they go in the oven(.
  5. Bake at 375 for about 20 min.
