Directions:

  1. Combine bulgur and water in large bowl cover and let stand 5 to 10 minutes or until bulgur is tender and water is absorbed.
  2. Add tomato, chopped mint, parsley, cucumber, and green onions; toss well.
  3. Combine lemon juice and next 5 ingredients in a small bowl; stir well with a wire whisk.
  4. Drizzle lemon juice mixture over bulgur mixture; toss well. Transfer to a serving bowl. Garnish with fresh mint, if desired.
