Swordfish-Fruit Kabobs

Ingredients:

  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • 2 tsp soy sauce
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 lbs swordfish steaks
  • 1 small pineapple
  • 3 medium nectarines

Directions:

  1. Combine first 7 ingredients to make a marinade.
  2. Cut swordfish into 2 chunks.
  3. Marinate fish at least 30 minutes.
  4. Cut pineapple to have 16 chunks.
  5. Cut nectarines into quarters.
  6. Thread pieces onto skewers.
  7. Grill 10-15 minutes, brushing with marinade and turning often.
