Swiss Potato Pancake

Ingredients:

  • 1 lb medium russet potatoes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp butter

Directions:

  1. Cook potatoes in pot of boiling salted water until just tender then drain well.
  2. Peel potatoes and cut lengthwise into quarters then refrigerate for 20 minutes.
  3. Coarsely grate cold potatoes into large bowl then sprinkle with salt and pepper and toss to blend.
  4. Melt butter with oil in heavy medium nonstick skillet over medium heat.
  5. Add potatoes to skillet.
  6. Sauté until potatoes begin to color stirring occasionally about 5 minutes.
  7. Using metal spatula press potatoes firmly into flat pancake.
  8. Reduce heat to low and cook without stirring until pancake is brown and crisp about 12 minutes.
  9. Slide pancake out onto large plate and cut into wedges.
  10. Place on plates browned side up and sprinkle with parsley.
