Sweet-sour Beans and Carrots

Ingredients:

Directions:

  1. Place carrots in a large saucepan and cover with water.
  2. Bring to a boil.
  3. Cook, uncovered, for 4 minutes.
  4. Stir in beans.
  5. Return to a boil.
  6. Cook mixture 5-6 minutes longer or until the beans and carrots are tender.
  7. Drain.
  8. In a large skillet, cook bacon over medium heat until crisp.
  9. Remove to paper towels to drain.
  10. Saute onions in drippings until tender.
  11. Add the apples, vinegar, sugar and salt; mix well.
  12. Cover and cook until apples are tender, about 2 minutes.
  13. Stir in bean mixture; heat through.
  14. Sprinkle with bacon.
