  1. Place potato, overlapping slightly, on a jellyroll pan coated with cooking spray. Coat potato with cooking spray. Bake, uncovered, at 375° for 30 minutes or until tender, turning once. Transfer to a bowl.
  2. Combine syrup, juice concentrate, and pecans in a glass measure. Microwave at HIGH 30 seconds; drizzle over potato slices.
