Sweet Potato Supreme

Ingredients:

  • 1/2 cup butter
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4-1/2 tsp salt (to taste)
  • 1/2-1 cup milk (enough to mash)
  • 4 tbsp butter
  • 1/2 cup sugar
  • 2 tbsp milk
  • 1/4 tsp salt
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 400.
  2. Peel, cube and boil potatoes until soft.
  3. Mash potatoes with butter, cinnamon, nutmeg, brown sugar and salt.
  4. Add enough milk to make mashed potatoe consistency.
  5. Pour into a 10 inch baking dish.
  6. Topping:.
  7. Combine butter, sugar, milk and salt in a saucepan and cook over low heat, stirring until thick and bubbly.
  8. When cool, add vanilla.
  9. Sprinkle chopped pecans over potatoes.
  10. Pour topping over the pecans.
  11. Bake 15-20 minutes.
