Sweet Potato Souflee

Ingredients:

  • 1 cup brown sugar firmly packed
  • 1 stick butter
  • 1 egg
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp allspice
  • 1/2 tsp vanilla
  • 1/4 tsp lemon juice
  • 1/2 tsp orange juice
  • 1-1/2 cup marshmellows (mini's)

Directions:

  1. Bake sweet potatoes at 350 degrees until soft (approximately 1 hour). Let cool. Increase oven temperature to 375 degrees. After potatoes are cool, peel and discard skins. Mash thoroughly. Melt butter and mix with potatoes. Add all other ingredients except marshmellows and mix well.
  2. Pour mixture into lightly-greased casserole dish.
  3. And bake at 375 degrees for 20-30 minutes. Remove from oven and stir.
  4. Top with marshmellows and return to oven to brown (about 5 minutes).
  5. This dish can be made the day before and refrigerated before baking.
