Sweet Potato Pancakes (Bisquick)

Ingredients:

  • 3/4 cup buttermilk
  • 1 cup bisquick
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla

Directions:

  1. Whisk egg and buttermilk. Stir in sweet potatoes. Stir in other ingredients.
  2. Heat skillet. Cook on 2 on electric stove.
  3. Better reheated in pan rather than in microwave.
