Ingredients:

Directions:

  1. Blend together butter and sugar. Add eggs, vanilla, buttermilk, flour, baking powder, and sweet potatoes. (can use canned sweet potatoes) Mix thoroughly. Pour batter into greased muffin tins about 2/3 full.
  2. Bake at 350' for 20-30 minutes
