Sweet Potato Lentil Soup

Directions:

  1. Saute first 6 ingredients for 5 mins
  2. Combine all ingredients until the stock in a large pot. Bring to a boil and then simmer for 50 minutes.
  3. Add sweet potato and simmer for 20 minutes, or until potato is cooked through.
  4. Add herbs and season with salt and pepper to taste.
