Sweet Potato Cranberry Bake

Ingredients:

Directions:

  1. Place sweet potatoes in dutch oven; cover with water.
  2. Bring to a boil; reduce heat; cover and simmer 40-50 minutes or until tender.
  3. Drain.
  4. When cool enough to handle, peel or slip from skins & cut into 1/4 inches slices.
  5. Place half in a greased 2 1/2 qt baking dish.
  6. Top with half of the cranberries, brown sugar, and butter.
  7. Repeat layers.
  8. Pour orange juice over the top.
  9. Cover and bake at 350* F for 30 minutes.
  10. In a small bowl, combine the walnuts, brown sugar, and cinnamon; cut in butter.
  11. Sprinkle over sweeet potato mixture.
  12. Bake uncovered, 10 minutes longer or until topping is golden brown.
  13. Prep time includes time to prep the sweet potatoes.
