Sweet Potato Chili

Ingredients:

  • 1 tbsp olive oil
  • 5 cloves garlic
  • 2 cups yams
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 1/4 cups black beans

Directions:

  1. Heat oil, saute onion and garlic for 4 minutes or until tender.
  2. Add sweet potatoes, chili powder, tomatoes and 1 cup water, bring to a boil.
  3. Cook for ~15min or until potatoes are fork tender.
  4. Add black beans, continue cooking for another 5 minutes.
