Sweet Nutty Black Rice Pilaf

Ingredients:

  • 1 1/2 cups black rice
  • 1/4 cup olive oil
  • 3 tbsp orange zest
  • 3 cups water
  • 1/2 tsp salt

Directions:

  1. In a 2-quart sauce pan, heat the oil over medium heat, add onions and sauté until translucent, about 5 minutes, making sure not to brown the onions.
  2. Add the orange zest to the onions. Stir in the rice and immerse it in the oil until the rice is hot.
  3. Stir in the water, add salt and bring to a boil. Cover, lower heat and simmer over low heat for 30 minutes or until the rice is nearly tender.
  4. Let rest for a few minutes before fluffing. Add the chopped raisins and walnuts on top and serve.
