Sweet Fig Muffins

Ingredients:

  • 1/2 cup sugar
  • 3 eggs
  • 2 cups fig preserves -- mashed w/syrup
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. Preheat oven at 375F.
  2. Cream butter and sugar.
  3. Add eggs and beat well after each.
  4. Add fig preserves with syrup.
  5. Stir in oatmeal and sifted flour, baking powder, soda and salt.
  6. Mix only enough to moisten dry ingredients.
  7. Bake in buttered muffin cups for 15 - 20 minutes.
  8. Serve warm.
