Sweet Corn Cake

Ingredients:

  • 2/3 cup masa harina
  • 1/2 cup water
  • 1/2 cup sugar
  • 1/3 cup cornmeal
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 400°F
  2. Combine and mix all ingredients except for the corn.
  3. Once this is mixed completely, add in corn and mix again.
  4. Pour into greased casserole dish or cake pan.
  5. Bake until center is done (insert knife or toothpick, if it comes out clean then the middle is done) and top is golden and crispy.
