Ingredients:

  • 1 1/2 cups beans , kidney
  • 1 cup tomatoes
  • 2 tbsp parsley
  • 2 tbsp basil
  • 1/4 tsp salt
  • 1/8 tsp pepper

Directions:

  1. Steam ears of corn. When cool, cut kernels from the cobs to yield 1 cup.
  2. Peel seed and chop the tomatoes.
  3. Finely mince the green pepper, parsley and basil.
  4. Combine with the salt, pepper and lime juice and mix well.
  5. Chill before serving
  6. Optional: Add the zest of the lime and a dash of your favorite hot sauce
