Sun-Dried Tomato Pesto

Ingredients:

  • 2 cup basil
  • 2/3 cup parsley
  • 1 tbsp pine nuts
  • 2 cloves of garlic
  • 1 pepper to taste

Directions:

  1. 1. In a non-stick skillet, toast walnuts and pine nuts until fragrant. Set aside to cool.
  2. 2. Add basil, parsley, sun-dried tomato, garlic, and nuts into a food processor. Pulse until course.
  3. 3. Add freshly grated parmesan cheese to mixture and pulse until mixed in.
  4. 4. Add EVOO little by little until desired consistency is met. (Be careful not to add too much oil otherwise pesto will come out too gooey)
  5. 5. Add pepper to taste.
  6. Refrigerate in a tightly sealed container for at least an hour to let flavors come together.
  7. Note: You do not need to add salt to this recipe. The parmesan cheese will add all the salt flavor.
  8. Pesto will stay fresh for a few days in a tightly sealed container in the refrigerator.
