Ingredients:

Directions:

  1. Saute squash in 2 T butter, set aside
  2. Tear spinach into pieces, saute in 2 T butter, set aside
  3. Saute tomatoes in 2 T butter,, set aside
  4. Mix cottage cheese, crackers, herbs in a small bowl
  5. Put squash in a 2-qt casserole dish. Add 1/2 cheese mixture, all spinach, remaining cheese mix, then tomatoes.
  6. Top with provolone slices.
  7. Bake 375 degrees 30 min
