  1. Clean the mushrooms and remove the stems, put the stems to one side to be used.
  2. In a food processor, add the stems of the mushrooms, garlic, onion, olives, herbs, pepper and bread crumbs. Process until onion and mushroom is diced very small.
  3. In a non-stick pan, heat the oil over medium heat. Cook the mixture for 3 minutes, stirring constantly.
  4. Remove the onion mixture to a mixing bowl. Add the goat cheese and stir. Fill each mushroom cap with the mixture and then place into the skillet facing up and cover. Heat them through on medium heat. Cook them for approximately 6 minutes, depending on the size of the mushroom. Check on the frequently to ensure that they are not burning on the bottom.
