Stuffed French Toast

Ingredients:

Directions:

  1. In a shallow bowl, beat filling ingredients until smooth.
  2. Set aside.
  3. In another medium mixing bowl, combine eggs, milk, and vanilla.
  4. Cut a pocket into the side of each slice of French bread.
  5. With spoon, stuff 1-2 tablespoons of filling into bread pockets.
  6. Spray griddle with nonstick cooking spray.
  7. Preheat griddle to medium-high heat.
  8. Dip each slice of bread into egg mixture.
  9. Fry for approximately 2-3 minutes on each side, or until golden-brown.
  10. Serve with butter and blueberry syrup, if desired.
  11. BLUEBERRY SYRUP:
  12. In saucepan, mix water, maple syrup, sugar, and cornstarch.
  13. Bring to boil and continue boiling for 2 minutes, or until thickened.
  14. Reduce heat to low.
  15. Add blueberries and stir until combined.
  16. Simmer for 5-7 minutes.
  17. Stir lightly again before serving with french toast.
  18. Enjoy!
