  1. Shell the walnuts and dip into boiling water for a few minutes: drain and finely chop, but leaving a few whole walnuts for garnish. Prepare hazelnuts in the same way, leaving a few hazelnuts for garnish.
  2. Cut 3 of the avocado's in half lengthways, remove the stones and arrange on a serving dish.
  3. Cut the remaining avocado, scoop out the flesh and put flesh in a bowl. Mash the avocado flesh with a fork, add chopped nuts, celery. tomato paste.vinegar and salt and pepper.
  4. Mix ingredients together well.
  5. Fill the centres of the halved avocados with the mixture and serve garnished with the reserved nuts.
  6. Serve immediately.
