Ingredients:

Directions:

  1. Cream together butter and sugar with hand or stand mixer, until light and fluffy.
  2. Add honey and mix to combine well.
  3. Add eggs one at a time.
  4. Scrape bowl well and add dry ingredients, alternating with buttermilk or sour cream.
  5. Mix until just combined.
  6. Carefully fold in strawberries.
  7. Pour mixture into papered cupcake tins, about 3/4 full.
  8. Bake at 350 for about 20 minutes, until toothpick comes out ALMOST clean.(I don't believe in over baking cupcakes :)
  9. Let cool in muffin tin for about 3 minutes, then remove to wire rack.
  10. While cupcakes are baking, prepare frosting.
  11. Whip cream with electric hand or stand mixer until stiff peaks form, then set aside, keeping cool.
  12. Cream together cream cheese and butter.
  13. Add vanilla and sugar and beat until well combined and smooth.
  14. Add strawberries and carefully fold into cream cheese mixture.
  15. Once combined, carefully fold whipped cream in until well combined.
  16. Frost cupcakes when completely cooled and keep them cool if not served immediately.
