Strawberry Cheddar Cheesecake

Ingredients:

Directions:

  1. Mix the crumbs with the butter.
  2. Press over the bottom of a 9 inch springform pan.
  3. Bake at 350 for 5 minutes.
  4. While crust is baking, beat the cheeses and sugar together until fluffy.
  5. Beat in eggs.
  6. Add juice (or peels), flour and 1/2 cup whipping cream.
  7. Pour over the crust.
  8. Bake at 350 for 40 minutes or until center is set.
  9. Remove from the oven and cool.
  10. Arrange whole berries on top and brush berrie with corn syrup, or swirl pie filling on top in a decorative pattern.
  11. Whip remaining cream and pipe a border on top of the fruit.
  12. Refrigerate until serving.
