Ingredients:

  • 1 1/2 tbsp vegetable oil
  • 4 oz green beans , cut into 2-inch pieces (about 1 1/4 cups)
  • 4 small carrots, peeled , cut into matchstick-size strips
  • 1 red bell pepper , cut into matchstick-size strips

Directions:

  1. Heat oil in large skillet over medium-high heat. Add vegetables and sauté until crisp-tender, about 8 minutes. Season to taste with salt and pepper.
