Stir-fried Marinated Breakfast Beef

Ingredients:

  • 1 package of beef for stewing, sliced thinly
  • about 3 tbsp or a little bit more of canola oil, for stir-frying beef
  • innermost soft part of 2 lemongrass stalks, chopped
  • finely
  • 2 tbsp finely diced ginger root
  • 1/4 cup soy sauce
  • 1 tbsp lemon juice

Directions:

  1. Mix ALL ingredients for marinade & pour into beef in a bowl. Cover & marinate beef pieces in it for at least 4 hours or overnight. Store in the refrigerator.
  2. The next morning, heat the Canola oil. Remove beef pieces from liquid of marinade & stir-fry in oil till preferred doneness ( I stir-fry beef with the chopped Lemongrass & Ginger root pieces). Enjoy with steamed white or brown rice.
