Ingredients:

  • 1 1/2 cup of water
  • 1 tsp of salt
  • 3 tbsp of butter
  • 1 cup of milk
  • those measurements are for a family size version.
  • grandma roberts adjusted the measurements for a smaller dish for herself.
  • 1/2 cup of yellow corn meal
  • 1 cup milk
  • 1/2 tsp of salt
  • 1/2 stick of butter
  • method of mixing is the same for both.
  • grandma roberts baked hers at higher heat for less time for maximum puff and browning.
  • i've done both ways depending on the number of people i'm serving.

Directions:

  1. Boil water and salt
  2. Stir in cornmeal and butter.
  3. Cook until thickened.
  4. Add beaten egg yolks.
  5. Stir in milk gradually.
  6. Beat egg whites until stiff.
  7. Fold into cornmeal mixture.
  8. Pour into greased two quart baking dish.
  9. Bake at 350 degrees for 40-45 minutes.
  10. Serve at once with extra butter.
  11. Mom always used a pat of butter to gild the lily by rubbing it very lightly over the hot bread.
