Ingredients:

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/4 tsp kosher salt
  • 5 cups spinach
  • 1/3 cup pecans
  • 2 oz goat cheese (1/2 cup)

Directions:

  1. In a large bowl, whisk together vinegar, olive oil brown sugar, lemon juice, and kosher salt. Add spinach to the bowl and toss well. Divide among 4 plates. Chop pecans and crumble goat cheese. Top each serving with some of the nuts and cheese.
