Ingredients:

Directions:

  1. Cook Spinach; drain and reserve liquor.
  2. Melt butter over low heat; add flour, stirring until smooth.
  3. Add onion and cook until soft.
  4. Add liquid slowly, stirring constantly.
  5. Cook until smooth and thick; continue stiring.
  6. Add seasonings and cheese; stir until melted.
  7. Combine with spinach.
  8. Serve as is or in casserole topped with buttered bread crumbs.
  9. Flavor improves if refrigerated overnight.
  10. This is also great as a dip.
