Spinach Hummus

Ingredients:

  • 1 3/4 cups garbanzo beans
  • 1/4 cup tahini
  • 2 tbsp garlic
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 tsp kosher salt

Directions:

  1. In a food processor, process beans, garlic, spinanch and olive oil.
  2. Add lemon and salt and blend.
  3. If spinach hummus if too thick, add 1 tablespoon wter until desired consistency. Hummus should be smooth and creamy.
  4. Can be made 2 days in advance and stored in airtight container in the refrigerator.
