Spinach/Feta Eggs

Ingredients:

Directions:

  1. Chop and wash spinach and onions
  2. Sautee the onions in olive oil on med/low heat for 2 min
  3. Add spinach
  4. Add dried oregano
  5. Cover with a lid, stirring occasionally, and allow spinach to reduce
  6. Right before spinach is done, beat eggs with buttermilk
  7. Add egg mixture to sautee
  8. Mix well and stir continuously to keep from sticking
  9. When eggs are done, turn off the heat and add feta. Stir to combine
  10. Eat. Yummy :)
