Ingredients:

Directions:

  1. Dice 1 onion in very small pieces and cook till clear.
  2. Add 1/2 teaspoon of crushed red pepper.
  3. Add 8 ounces chopped spinach that has been thawed and chopped into small pieces.
  4. (HINT: I take the chopped spinach from the freezer and hit it with my rolling pin. It crushes it into tiny pieces)
  5. Cook till spinach is heated completely.
  6. Add 1/2 cup parmesan cheese , stir and remove from heat (taste, as you may like more, I like it lightly flavored).
  7. After it has cooled a bit, I add 2 cups of mayo, or 1 cup or mayo and 1 cup sour cream {It is great either way.}
  8. Season as you would like. I put garlic powder at times and also horseradish to make it a bit different.
  9. AS you make this recipe you will change it up as you go. It is a great begining to a great dip! Enjoy!
