  1. Squeeze water out of spinach if using frozen.
  2. Mix chopped mushrooms, spinach and chopped green onion in bowl. Mix in salt, red pepper flake (if you like it spicy) and Bisquick.
  3. Spoon into large muffin cups that have been sprayed with non stick. Pour egg beaters over top in the tins, fill about half way. bake for about 20 min at 375 or until center is set.
