Spicy Rhubarb Cake

Ingredients:

  • 1/3 cup boiling water
  • 1 1/2 cups sugar
  • 1 1/4 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cloves
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 tsp vanilla

Directions:

  1. Pour boiling water on rhubarb in large mixing bowl.
  2. Grease and flour 13 x9 x2 pan.
  3. Beat rhubarb and remaining ingredients on low speed, 1 minute, then beat on medium speed, 2 minutes.
  4. Pour into pan.
  5. Bake at 350 degrees 45 to 50 minutes; cool and frost with your favorite frosting.
