Spicy Pumpkin Butter

Ingredients:

  • 1/4 cup dark brown sugar , packed
  • 2 tbsp sugar
  • 1/4 cup water
  • 1/2 tsp allspice
  • 1/4 tsp ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 1/2 cups pumpkin

Directions:

  1. Combine the two sugars, water, allspice, ginger, cloves and cinnamon in a 4-cup glass measure.
  2. Microwave on high for 3 minutes, stir.
  3. Add pumpkin and microwave on high for 5 minutes.
  4. Let cool and refrigerate.
  5. This will keep for several weeks in the refrigerator or can be frozen.
  6. Note: Use this as you would apple butter, or try adding it to whipped cream and garnish a pumpkin pie.
