Ingredients:

Directions:

  1. Soak skewers for about 30 minutes while preparing shrimp.
  2. Bring sugar and lime juice to a simmer in a small saucepan, cook, stirring, until sugar dissolves, about 2 minutes.
  3. Remove from heat and stir in the zest, chili paste, and fish sauce; season with salt.
  4. Heat grill to high heat; brush grates with oil.
  5. Thread 3 shrimps per skewer and season with a little salt; divide sauce, in half, into 2 bowls (one will be for brushing shrimp as it cooks, the other is for serving).
  6. Grill shrimp 1 minute, brush with sauce; turn, grill an additional minute, brush with sauce.
  7. Continue grilling until shrimp is cooked through and opaque, 1 to 3 minutes more.
  8. Serve with reserved sauce.
