Spicy Chicken Soup

Ingredients:

  • 1 medium onion
  • 1/4 cup jalapeno
  • 1 tbsp cumin
  • 1 1/2 cup zucchini
  • 1 1/2 cup tomatoes
  • 3 tbsp couscous
  • 1 medium potato
  • 1 tsp olive oil
  • 2 tbsp tomato paste

Directions:

  1. Saute onion and celery. Add rest of ingredients except couscous, green pepper, zuchinni, and toms. Add water to cover. Cook until vegetables are tender. Add rest of veggies. Simmer 5-10 minutes more. Spice with hot sauce or cayenne.
