Spiced Beer Batter

Ingredients:

  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1 -2 green chili , deseeded and finely chopped
  • 1 tbsp olive oil
  • 2/3 cup beer, approx
  • 1 large egg white

Directions:

  1. Mix all the dry ingredients, add the oil and the beer.
  2. If you have the time, cover and leave to stand for a few hours, this will improve the texture of the batter{not in the refrigerator} Just before you need it, beat the egg white stiff and fold it into the batter.
  3. Whatever your choice of food, coat with flour first, dip in the batter, then deep fry.
  4. You can leave out the spices for a plain batter and use water instead of the beer.
  5. This is great for onion rings!
