Spareribs and Sauerkraut

Ingredients:

  • 3 lbs spareribs
  • 1 tsp salt
  • 1 medium onion
  • 1 quart sauerkraut
  • 1/2 tsp caraway seed
  • 2 tsp sugar
  • salt and pepper

Directions:

  1. Cut spareribs into serving pieces.
  2. Brown them in a pan or broiler.
  3. Place ribs in large pan.
  4. Add salt, onion, and water.
  5. Cover and simmer for about 1-1/2 hrs until almost tender.
  6. Taste sauerkraut for acidity, and rinse if necessary in warm water and drain.
  7. Add to meat.
  8. Season with salt and pepper.
  9. Cook uncovered for about 30 minutes.
  10. Serve with mashed or baked potatoes.
